Ingredients:
4 TBSP coconut oil
100g coconut sugar
125g caster sugar
1 tsp orange essence
150ml oat milk
1tsp baking powder
310g Plain white flour
50g dark chocolate chips
Method:
Heat coconut oil until melted. Add your melted coconut oil, caster sugar and coconut sugar into a blender and blend till you have a paste with a foam like texture. Pour the oat milk and orange essence in then blend again until smooth.
Transfer the mixture into a bowl. Sift in the flour and baking powder and mix until you have a thick cookie dough, mix in the chocolate chips then place the dough in the fridge to cool for an hour.
Set the oven to 170 fan, then place parchment on tray. Remove the dough and begin to measure out the mixture using a tbsp. Gently flatten each ball into a disk using the back of the spoon. Bake for 10 minutes , check to make sure your cookies have a golden top. If they are too pale keep them in for a little longer but check regularly. If the top is becoming a dark brown remove them as they are beginning to overcook. Leave to cool and enjoy!
