Brazilian style beans and facon.

Beans are a great stable food and I became obsessed with the simple but extremely tasty dish of rice and beans. I recently cooked Brazilian food for my partner who is from Brazil, he explained the traditional method of how it would be cooked at home and I noted the recipe we created. It is both a simple and hearty dish but requires time as the beans will have to be soaked the day before, then cooked for 6hours till soft. Though the beans can be eaten on their own I recommend it’s eaten with a side of rice and vinaigrette. Below I have shared the recipe.

SERVES: 5 -6 PREP : 24h COOKING TIME: 6-7h


INGREDIENTS


500g of dry pinto beans

4 garlic cloves

3 bay leaves

Pinch of salt

Water (for soaking & cooking beans)

1 pack of Vivera bacon style pieces


METHOD


Soak the Pinto Beans in water till they are fully covered and leave overnight. Once soaked drain and transfer them to a slow cooker. If you do not have a slow cook you can use a pan to cook.


Peel the garlic cloves then add the peeled garlic, bay leaves and pinch of salt to the beans. Cover the ingredients with cool water ,you want it to sit just above. Now place the slow cooker onto high and let this sit. The beans will take roughly 6 hours to cook. If you are using a pan over a hob you will need a low setting as the beans will cook quicker.

Check your beans are soft after 6 hours, if they are remove 3 tbsp of beans and place into a bowl. Using a fork mash these then add back into the pot. This should help thicken your mix.


Finally add 1 pack of Vivera bacon style pieces and let this simmer for another 1/2 hour before serving.



Recommendation- I recommend you serve this with rice and vinaigrette.
