Tear and share mediterranean pizza.

Mediterranean Pizza

Ingredients

Pizza dough:


500g strong white bread flour

1 tsp dried yeast

1 ½ tbsp olive oil, plus extra

300 ml water

Toppings:


1 aubergine

1 sweet potato

1 courgette

2 tomatoes

1 avocado

Dried origano

Parsley


Hummus


1 can of chickpeas

1/2 lemon

2 garlic cloves

1 tsp of tahini

1 tbsp of aquifer (chickpeas juice)

Seasoning

2 tbsp of olive oil


METHOD


Put the flour and salt in a bowl. Pour 300 ml of warm water into a jug and mix it with the yeast. Let it stand for 10 minutes, then add oil to the warm water and pour it over the flour. Stir well with a spoon, then start to knead the mixture together for 25 minutes in the bowl until it forms a soft and slightly sticky dough.


Dust a little flour on the work surface and knead the dough for 10 minutes. Put it back in a greased mixing bowl and cover it. Leave it to rise in a warm and dark place for 1 hr.


While the dough is raising, chop the aubergine, sweet potato, tomato and courgette into thin slices.


Place the aubergine into a bowl of salted water and let it sit for 30 minutes. This helps remove the bitterness.


Put the oven on 190 °C/fan. Place the sweet potato and aubergine on a tray, coat in olive oil and season before putting them into the oven. Cook for 30 minutes.


Remove it from the oven then add the courgette and tomato. Cook for another 20-25 minutes then remove to cool.


Hummus – Drain the chickpeas saving 1 tbsp of aquafaba. Blend the chickpeas, aquafaba, garlic cloves, lemon, oil, tahini and seasoning until smooth.


Divide the dough in 2 pieces, shape into balls and flatten each piece out with a rolling pin or using your hands. Make sure the dough is dusted with flour to stop it from sticking.


Raise the temperature on the oven to 200 °C/fan. Place both pizza bases in the oven for 12 minutes.


Once their colour is a golden brown, take them out of the oven and let them cool. Cover the pizza base with hummus then lay the roasted vegetables on the top. Cut an avocado into slices and place it on top, drizzle olive oil over the pizza, and garnish with parsley and dried oregano.
