TOFU CHOW MEIN
Chow Mein translates as ‘stir fried noodles’. It is a popular dish in China and has continued its popularity in the UK. And, why wouldn’t it? A quick and tasty dish packed full of fried vegetables and noodles. What’s not to love?
I want to share my quick and easy recipe with you for a crunchy, flavoursome tofu Chow Mein. I hope you enjoy it as much as I do.
SERVES: 2 PREP TIME: 5-7 minutes COOKING TIME: 12-15 minutes
Ingredients
FOR THE TOFU :
1 Pack of The Tofoo Co Naked Tofu 280g
1 tsp of cornflour
1 tsp of hoisin sauce
2 tsp sesame oil
REST OF THE INGREDIENTS:
1tsp sesame oil
3-4 tsp soy sauce
1 tsp coriander powder
1 tsp hoisin sauce
1 tsp tomato ketchup
1/2 -1 tsp chilli sauce (optional)
2 garlic cloves
8g fresh ginger
1/4 cucumber
3 spring onions
4 close cup mushrooms
2 pak choi
2 celery sticks
1 Pack of Amoy – straight from the wok – medium noodles
GARISH
Handful of fresh coriander
Sesame seeds
TOFU CHOW MEIN
METHOD
Press the tofu for 30 minutes before cooking to extract any excess water, once dry cut into cubes. Add the sesame oil into the wok or frying pan and heat on a high temperature you want it to be hot before the tofu is added. Add hoisin sauce and cornflour, mix then add the tofu. Continue to keep the tofu on a high heat and toss for 10 minutes making sure all sides are well cooked . The tofu will be ready when it is crispy on the outside. Remove this from the pan and set aside.
Wipe the wok down before using it to cook the vegetables. Peel the garlic and ginger. Chop all vegetables finely and the cucumber, celery into thin strips. The pak choi can be cut in quarters.
Add sesame oil into the pan and preheat, once hot add garlic, ginger and soy sauce for and cook for 30 seconds. This should cook quickly in hot oil, make sure you stir repeatedly. Add, soy sauce, hoisin, coriander powder, tomato ketchup, cucumber, celery, mushroom and pak choi then stir for a few minutes on a high heat. Add the tofu and noodles, spring onion, 1 tsp of sesame oil, chilli sauce and continue to cook for 2 minutes, stir ingredients constantly.
Finally serve up and garnish with fresh coriander and sesame seeds.
